Homemade maple apple peanut butter
Peanut butter…something I dream about, think about, talk about, write about and even sing about on some days.
How I love thee.
I was a changed little girl the day my mom handed me a spoon in one hand and a jar of peanut butter in the other. Here only instructions: dip.
Oh so delicious!
This past weekend at her Texas home we decided to take our peanut butter obsession one step further and make our own. I know, many have been doing this for ages but this is a first for us!
The simplicity of this process is downright incredible. And if you don't already know, I like simple.
So let's talk peanuts. You can be simple and go with the classic roasted with or without salt. You can go jazzy and try honey roasted. You can even get creative and add your own ingredients. Think chocolate, honey, maple, coconut, and fruit. The list is endless and completely up to you!
We decided to get all sorts of jazzy and mimic a jar of peanut butter that my favorite friend in the world gave me (yes, I assign favorites to those who give me peanut butter):
Vermont Maple Apple Peanut Butter
Ingredients:
- 2-3 cups honey roasted peanuts
- 1 apple, cored and sliced
- 1 tbsp maple syrup
- cinnamon
4 ingredients? yes please!
Step 1. Place sliced apple pieces in a small pot with a splash of water and cover with cinnamon. Heat on high.
Step 2. Cook apple, stirring often until soft but not mushy.
Step 3. Gather peanuts and maple syrup.
Add, along with apples to a food processor or Vitamix blender.
Now, my mom is the coolest gal on the block and has a Vitamix blender- a very strong grade blender that pulverizes anything in less than a minute. If the Vitamix is not in your kitchen, not to worry- all you need is a food processor.
Step 4. Mix for 1 minute if in Vitamix, pushing mixture down towards the blade consistently. Mix for 6-8 minutes in food processor or until desired consistency.
Unbelievable
Changes for next time:
– use roasted n salted peanuts instead of honey roasted
– add more maple!
