Hearty Ham + Lentil Soup
Some days a gal just needs hearty soup. You know…the kind that warms your toes and makes you smile the minute the aroma fills the house.
I needed that.
And I think you do to.
Here is what you need for success:
- cooked 1 lb ham or ham shank, sliced into bite size pieces ***
- 1/2 onion, chopped
- 3 garlic cloves, minced
- 4 carrots, chopped
- 2 celery stalks, chopped
- 2 tbsp butter
- 1.5 cups lentils
- 3 cups chicken broth
- 3 cups of water
- pinch of cayenne
*** I normally would have liked a ham shank for this soup as that meat gives this soup so much flavor but Whole Foods could not provide me that this weekend. So a 1lb of maple smoked ham did just fine!

Okay, let's get started.
Chop n prep veggies.
Melt 2 tbsp of butter (yes- do the real thing, nothing less will suffice) on medium heat in stock pot or dutch oven. Butter truly is the perfect thing to saute your veggies in. Amazing flavor and you don't need much!
Add onion and cook until tender (4-5 minutes)
Add carrots, celery and garlic and cook an additional 5 minutes or until veggies are tender.
Add remaining ingredients: ham, lentils, broth, water, cayenne. Bring to a boil.
Simmer for 30 minutes.
This soup tasted incredible after about 45 minutes of simmering. I then took my immersion blender and make the texture of the soup a bit softer but this is not necessary for enjoyment.
